ROASTED PUMPKIN, CAPSICUM & ASPARAGUS SALAD
Salad Ingredients
Perfect for Lunch / Dinner / Side Dish / BBQ Salad
1/2 Small Butternut Pumpkin (sliced in to half moons)
1 small red capsicum (cut in to quarters and deseeded)
1 bunch of Asparagus
a small handful of chopped Nuts (chopped or crushed)
1/2 small handful of dried Cranberries
French Mayonaise
1 teaspoon of low fat Mayonaise
1 teaspoon of low fat French Dressing
Toss Pumpkin and Capsicum with a little Olive Oil, Salt and Pepper. Spread out on Roasting Tray and bake at 200 degrees celcius for 15 minutes. After 15 minutes place Asparagus on top of roasted vegetables and bake for another 5-7 minutes. Take from oven to cool and when cool enough to touch, peel and slice capsicum in to lengths.
Combine all ingredients in a Salad Bowl and add Nuts and Cranberries. Dress with French Mayonaise and eat while warm.

Butternut Pumpkin contains vitamins and antioxidants. It has more Vitamin A than regular Pumpkin and is a great source of dietary fibre.
Capsicum is a known disease fighter. Full of Vitamins C and A it is all full of essential nutrients.
Nuts are full of good fats, taste great and are good for you. Use a variety to reap more health benefits.
Cranberries are one of the healthiest foods on earth. All berries are little nutritional powerhouses even in small doses they are of HUGE benefit. Full of antioxidants, Cranberries fight bacteria and help stop plaque forming on your teeth.

Btw, for us rebellious Americans, 200 Celsius is about 390 Fahrenheit. Can’t wait to try this myself!
